Pounded yam instant flour commonly known as poundo yam, is used to prepare pounded yam. I love pounded yam especially when it is served with egusi and vegetable soup. Thanks to technology we don’t have to go through the stress of pounding yams using mortar and pestle before we can eat our favorite pounded yam. All we need to do is step into a store and buy pounded yam instant flour (poundo yam). This is also a great business opportunity for entrepreneurs and investors.
The variety of yam used in pounded yam instant flour (poundo yam) production is a white yam. It has to be a white yam.
Equipment used for pounded yam instant flour processing are: slicing Machine, per boilers, dryers (cabinet/flash), milling machine (hammer mill with cyclone), sifting machines, sealers, packaging machines, bowls, knives, scoops and weighing scale.

Cleaning: Clean yams to remove sand and dirt
Peeling: Peel manually using knives. Peel under water. Peeled yam must constantly be placed underwater, this is to prevent enzymatic browning
Slicing: Slice under water. Slice peeled yam tubers into uniform size chips. This is to enable the chips to dry faster at the same time and temperature.
Par-Boiling: Par-boil yam chips, Boil yams for a short period of time. Be carefull not to cook the yam chips.
Drying: Dry yam chips in a cabinet dryer. Ensure yam chips are properly dried.
Milling: Mill dried chips into a fine flour using a hammer mill
Cooling: Cool milled flour before packaging to reduce the heat generated as a result of milling
Packaging: Package pounded yam instant flour in different sizes (1kg, 2kg, 5kg, and 10kg) seal and label
Packaged pounded yam instant flour (poundo Yam) can be sold to individuals, supermarkets, schools, Restaurants, hotels, and caterers. Pounded yam instant flour (poundo yam) can also be exported to other countries.

• 3 years agoYam flour (elubo) is used to prepare amala a stable food in the southwest part of Nigeria. While yam flour (pondo yam ) is used to prepare pounded yam. Amala is black in colour while pounded yam is white in colour. During the [rpduction of yam flour (elubo), yam chips are dried without parboiling while yam chips for pondo yam are parboiled before drying.

i tried doing it and for the first time i totally cooked the yam at the end the pounded yam was not elastic
i tried the second time by paraboiling the yam but i noticed that the yam started darkening since i prepare it the eve of the drying.why did the paraboiled yams started becoming dark not brown

• 3 years agoThe yam gets brown because of the enzymatic browning reaction…This can be stop or prevented by soaking the yam slices in Sodium meta-bisulphite solution. Other factors to check are the types of yam used and the drying temperature. Make sure you use white yams and don’t dry at very high temperatures.
