TIGERNUT MILK PRODUCTION
Tigernut milk which is said to have originated from Spain is known in Spain as chufa de horchata and also known as kunu aya in the northern part of Nigeria. Tigernut milk which is extracted from Tigernuts is a rich source of carbohydrates, vegetable fat, protein, vitamins (Vitamin C and Vitamin E), minerals( iron, magnesium) and some digestive enzymes such as catalase, lipase and amylase. Tigernut milk does not contain lactose, casein protein, sodium, gluten, cholesterol and therefore ideal for people who are hypertensive or do not tolerate gluten or lactose and its derivatives. Tigernut milk does not produce any allergy.t
USES
Tugernut milk consumed alone is refreshing and also known for its aphrodisiac ability
Tigernut milk can be used as milk in tea and coffee.
Tigernut milk can be used as an ingredient in cooking.
Tigernut milk can be used as an ingredient in confectioneries and baked goods
Tigernut milk can also be a component in making a smoothie.

TIGERNUT MILK PRODUCTION FLOW CHART
Sorting: Remove stones, bad tigernuts and unwanted materials from the batch of tigrernuts to be extracted
Cleaning: Use clean water to clean/wash tigernuts
Soaking: Soak tigernuts in clean water. Dried tigernuts can be soaked for 24hrs while fresh tigernuts (un-dried tigernuts) can be soaked for 4-6hrs this is to help soften the tigernuts for easy grinding and also easily remove any adhered dirt to the tigernuts.
Washing: Sieve the soaked tigernuts from the water and wash in clean water
Grinding/Milk Extracting: Grind tigernuts using a grinder or a blender. You can also use an extractor to extract the milk from the tigernuts.
Filtering: Filter the ground tigernuts using a muslin cloth, to give you the milk and the residue. Continue to steer in water until all milk is extracted. filter the milk to ensure there is no residue in the milk.
Packaging: Fill Extracted tigernut milk into container size of your choice. Plastics and glass bottles could be used for packaging.
Tigernut milk could be sold at supermarket, Schools, Offices, Churches e.t.c
Note: Keep refrigerated.
