To produce yam fries you need equipment such as automated cutting/ slicing machine, cold rooms, freezers, per boiler, bowls, and knives.
YAM FRIES PROCESS FLOW CHART.
Cleaning: Clean yams to remove sand and dirt
Peeling: Peel manually using knives. Peel under water note that peeled yam must constantly be placed under water. This is to prevent enzymatic browning
Par-Boiling: Par-boil yam
Cutting/Slicing: Slice yam into uniform size strips
Packaging: Package yam fries in plastic bags and seal.
Freezing: Freeze packaged yam fries in freezers or cold rooms
Note: Package yam fries should always be kept in the cold room or freezers and transported in a cooling van.
